Over the weekend I got creative and baked some cookies. It's not easy when you give up sugar for lent. My spouse has been under the weather and I was trying to cheer him up.

I have tried the keto way of eating a few times. Not having sugar is the hardest part. So I baked coconut chocolate chip cookies. You can use a sugar substitute like Golden monk fruit granular sweetener. I actually use brown sugar it's lower in sugar than regular sugar.

What cookie is best homemade?

Of Course Chocolate chip, number two is peanut butter. Followed by oatmeal raisin, and one I never thought of snickerdoodle. Hands down my Step-Mom makes the best chocolate chip cookies, She said the secret is butter and extra brown sugar.

My new favorite is Crumbl Cookie. They are so decadent. So glad we have one in Montrose now.

Now let's get back to my Coconut chocolate chip cookies. I use coconut flour, and a little bit of almond flour too. You can use chocolate chips that are sugar-free. I use semi-sweet, they are low in sugar. It will make about 20 cookies,(they will be small). Half cup brown sugar, half cup softened butter, 1 teaspoon vanilla, 2 eggs, half cup coconut flour, half teaspoon baking soda, a quarter teaspoon of salt, and half cup sugar-free chocolate chips. Bake at 375 for 10 to 12 minutes.
